Getting through the day?

I am sorry it has been a couple of weeks. I have a few things going on in my life that I need to take care of. This last week I did meet a couple of nice people during a craft sale I was doing. It is amazing to me the people I meet. You really never know what someone is going through until you talk to them and start to understand other lives. I know that I live with some health issues no one knows unless I talk to them. I can always talk about my chickens and dogs. They are my life and I am not sure I would get through some days without them.

I know when I am baking for these shows I listen to podcasts which are great. I mostly listen to true crime but there are ones that they interview others that have stories to tell. It helps me focus on something else that I am doing. I always make a plan of what I am going to make and each day what my goal is.

I do have those bad days that I just want to just not want to talk to anyone. It is easy to feel like that on some of the days. I do have people that care and check in with me to make sure I am doing fine. Please remember this you don’t know what someone else going through at any give time unless you talk to them or walked in their shoes.

This week I wanted to let you know a few things I am doing this week. I am going to see a hand surgeon to figure out what is going on. Plus, to see if I have to have surgery on my left hand to fix the problem. The next one is a big one. I am going down to the Mayo clinic again to get a procedure done. My specialists are down there so sometimes it’s better to do them there then up in st. cloud area. I never enjoy the prep for them, but sometimes you do what you have to. Staying as healthy as you can is important for me. I know others count on me.

When you think about your health it is not just physical, it is your mental health too. I know that is what I have the hardest time with. I try and figure out ways to make it better, but it doesn’t always work. I just have to remember that I need to live my life simply and enjoy each minute I have.

I think of my mom at times, because she had it rough and I know that I have support she didn’t. I miss her everyday. Every morning I thank God for letting me have another day with my family and dogs. I have a lot of people in my life, but I only have a few good friends that I enjoy in my life.

That is all for this week. I have to get ready and it is going to take me this whole week.

There are a lot of people that don’t know what this is. It is primary sclerosing cholangitis . Which is a disease of the liver. I have dealt with it for over 10 years now. Everyone deals with it differently I know that for sure. There is no cure for it, from what I have been told over the years. I know that my specialist watches what they call a MELD score. Every doctor deals with patience differently with this as well. I know when I hit a number she is sending me to the transplant unit to get all my tests done to get on a list.

I am letting you know that with my ulcerative colitis and this some days are hard to get thru. Plus I have to be careful not to be around sick people cause I can get sick easily and it is hard for me to get better.

I have dealt with both of these for over 10 years and when another year goes by I always have questions about what I can do to be more healthy and not in pain. I am going to be changing medication again. This is my 5th one and I wish my body would stop kicking them out and not work.

These last to weeks that is what I have been dealing with. I got sick over Christmas and I been trying to get better ever since then.

So please understand I am going to continue this and share what is going on but each week is different.

Easy GoulashEasy Goulash

I have a recipe that I tried and it was different.

1 lb Ground beef 15-1/4 oz can corn, drained

1/4 c Onion, Chopped 15 oz can kidney bean, drained and rinsed

14- 1/2 oz Can Stewed tomatoes shredded cheese

3/4 c water

2 c Elbow macaroni, uncooked ( you can use corkscrew noodles)

Brown beef and onion in a large skillet, drain grease. Add tomatoes and water; sprinkle with salt and pepper to taste. Add macaroni and simmer for 8 to 10 minutes or until macaroni is tender, add more water if necessary. Add corn, beans and cheese; heat until cheese is melted. Serves 4 to 6

I made this and it was so different then the goulash I grew up making. It was good I did use seasons that I could have instead of salt and pepper.
