OverwhelmedOverwhelmed

These past couple of weeks have been overwhelming for me. I had a few appointments and more this month. Plus over the weekend we got more chickens which is great. I just have not been sleeping well and that is not helping me get what I need done. I know that I will be fine but I just need something more.

I wish I could figure out what I need to help, but sometimes life hits you hard. I know that I will get back in the swing of things. I know that I want to help others and get back into church. I am taking steps to get there but it was hard. I have been stressed about how to get what I need to help and still do what I need to at home.

HealthHealth

This week I wanted to let you know a few things I am doing this week. I am going to see a hand surgeon to figure out what is going on. Plus, to see if I have to have surgery on my left hand to fix the problem. The next one is a big one. I am going down to the Mayo clinic again to get a procedure done. My specialists are down there so sometimes it’s better to do them there then up in st. cloud area. I never enjoy the prep for them, but sometimes you do what you have to. Staying as healthy as you can is important for me. I know others count on me.

When you think about your health it is not just physical, it is your mental health too. I know that is what I have the hardest time with. I try and figure out ways to make it better, but it doesn’t always work. I just have to remember that I need to live my life simply and enjoy each minute I have.

I think of my mom at times, because she had it rough and I know that I have support she didn’t. I miss her everyday. Every morning I thank God for letting me have another day with my family and dogs. I have a lot of people in my life, but I only have a few good friends that I enjoy in my life.

That is all for this week. I have to get ready and it is going to take me this whole week.

Comfort TimeComfort Time

As I reflect on this past week I came up with a few things that I need to do. The first thing I realized is I need to take some time for myself to enjoy my life. It doesn’t matter what it is, because it is about recharging. I know that I don’t plan to go far ahead because that is not a promise to me. I am just thankful for each day I get up and get to have another day with the ones I love.

I try to make it and enjoy life, save money and hang out with the ones that support me. I know without them life would be hard each day. I am glad to everyone that has followed me on this journey because this year has been a tough one. I have had ups and downs to get thru, which I have those who have come into my life to help me.

Sometimes I go back to what is comfortable to me, which is not what we need to do. We all need to get up and try something new. Just think about things you have always wanted to do but have been too scared to do. Sometimes people make a bucket list to see what they can do. All you need to do is thank God for that day and make some plans.
Text a friend you have not talked to in a while. Find a place that you have not gone but always wanted to. Have a date night with some girlfriends or husband, boyfriend or your better half. Everyone has something or somewhere they have always wanted to do. It is never too late.

Making SpaceMaking Space

This last weeks I have a lot going on and I need some encouragement. So when I need this I listen to this podcast. Hoda talks to many different people and it makes you think about your own life. It helps me look at my own life and see what I need to change or what I enjoy in life.

Sometimes I need just a day to process everything I was told. So when this happens I have to do something that helps me redirect my mind and take me back. This week I have been baking for a huge craft sale this coming weekend. It has helped me just to calm me.

I know that this life is not going to break me. I am going to find the purpose that I need to do. I am going to figure it out one day.

This is all for the day, I need to figure out something this month. I will be posting more soon.

CookbooksCookbooks

These past few weeks, I have been going thru my cookbooks and finding new dishes to try. I have made a couple of goodies. It has been a long process to find recipes to try. I have been posting some of them. I hope others try to make them. I won’t post if I don’t like it. I would let you know if I change it. There are things I can have or I make it smaller cause I only cook for 2 or 3 people. I don’t like a lot of leftovers.

After I been thru the cookbook I am planning on selling them. I will post on different sites. I want others to be able to get out of them as I did. I write down the ones that I want to pass along to my kids.

My grandma did the same thing and I got a lot of them, it’s hard to read a lot of them but it is fun to look thru the books and notebooks full of recipes.

I just want to let everyone know that each week I will be posting recipes for others to try.

Tater Topped CasseroleTater Topped Casserole

1 Pound ground beef 1 tablespoon ketchup

1 med onion, chopped (about 1/2 cup) 1 tablespoon Worcestershire

1 can cream of mushroom soup 3 cups frozen fried potato nugget (tater tots)

Cook the beef and onion in a skillets, pour any fat

stir the soup, ketchup, Worcestershire in the skillet. Spoon the beef mixture into a 2 -quart shallow baking dish. Arrange the potatoes around the inside edge of the baking dish

Bake at 425 for 25 minutes or until potatoes are golden brown.

I made this and it was very good. It been nice to try new dishes. Please try and let me know what you think.

Starting a new BusinessStarting a new Business

When starting a new business there is so much to think about. Name, Logo, pricing, etc…

When you think of the kinda business you want to start, you have to make sure you know all the right people. Plus you need the support from your family to make sure you are making the right decision. I know I always wanted to but I haven’t because I enjoy everything I do, when you make it a job it is not always fun anymore. I support two people now on starting their own business.

Each business is different. One business helps the other business in a few ways.

If you own chickens or reptiles and need meal worms , you can look up Minnesota Meal Worms to get some. We feed our chickens to them and they love that time of the day.

If you have baking needs you could look up Sweet 4 you and she can help you with that.

I am so happy for both of them for going after a dream of running their own business. Please let me know what you think and look both of them up.

Hash brown potato casseroleHash brown potato casserole

1 package (30 oz) shredded hash browns 1 can (101/2 oz) cream of potato soup

1/2 block cheese , shredded (cheddar) 2 tsp of chopped oinion

2 tbsp sour cream 1/4 cup grated parmesan cheese

Heat oven 350, spray a 3-quart shallow baking dish with vegetable cooking spray

Stir the potatoes, half of the cheese, sour cream, soup, onion and parmesan cheese in a large bowl. Season the potato mixture as desired. Spread the potato mixture in the baking dish. Cover the baking dish.

Bake for 45 minutes, uncover the baking dish. sprinkle with the remaining cheese.

Bake uncovered for 45 minutes or until the potatoes are tender and the top is lightly browned.

I did change this recipe because I can’t eat a lot of dairy. Plus I made it smaller because it was for only three people.

I don’t like a lot of leftovers. This was easy to make and it was good. I would make it again.

ProjectsProjects

This summer we had a lot of projects going on like a lot of others. So you want to get done as much as you can, but money is the biggest factor. What you have to do is figure out what you can do and put what is important. I know what I want to get done. I am looking forward to next year. There are something that we can’t do until next year. We lived in our last house for over 20 years and we never got everything done that we wanted so I am working hard to get more done here.

Please keep up with this blog because I am trying new recipes and I am sharing them with others. I am trying to eat better. We started going to farmer markets and we got fresh vegetables. I want to do what I can to try new dinners.

Easy GoulashEasy Goulash

I have a recipe that I tried and it was different.

1 lb Ground beef 15-1/4 oz can corn, drained

1/4 c Onion, Chopped 15 oz can kidney bean, drained and rinsed

14- 1/2 oz Can Stewed tomatoes shredded cheese

3/4 c water

2 c Elbow macaroni, uncooked ( you can use corkscrew noodles)

Brown beef and onion in a large skillet, drain grease. Add tomatoes and water; sprinkle with salt and pepper to taste. Add macaroni and simmer for 8 to 10 minutes or until macaroni is tender, add more water if necessary. Add corn, beans and cheese; heat until cheese is melted. Serves 4 to 6

I made this and it was so different then the goulash I grew up making. It was good I did use seasons that I could have instead of salt and pepper.
